Cottage Roll Recipe:
Split Pea Soup with Cottage Roll

Serves 4

Ingredients

  • Cooked cottage roll: 400 g, diced

  • Dried yellow split peas: 250 g, rinsed

  • Onion: 150 g, diced

  • Carrot: 150 g, diced

  • Celery: 100 g, diced

  • Garlic: 2 cloves, minced

  • Water or low-sodium broth: 1.5 L

  • Bay leaf: 1

  • Black pepper: to taste

  • (Optional: thyme or savoury)

Method

  1. Combine split peas, water (or broth), onion, carrot, celery, garlic, and bay leaf in a large pot.

  2. Bring to a boil, then reduce heat and simmer gently for 45–60 minutes, stirring occasionally, until peas are soft.

  3. Add diced cottage roll and simmer 10–15 minutes more, until heated through.

  4. Remove bay leaf, season with black pepper, and serve hot.
